Cake mix Doctor

I use the Cake Mix Doctor a lot when I just want to whip out a batch of quick cupcakes.Today I wanted to do some fast Halloween Cupcakes for Grumpy to take to work
tomorrow. 

The grandkids didn't come over because Alene is sick. 
         I decided to wing some Pillsbury FUNFETTI CUPCAKES 
with pudding added.. that's where the cake dr comes in.



I do not represent Pillsbury in any way I just used this product. 

This is how I Dr them up from the cakemix dr.



1 cake mix your choice
1 small box pudding mix (aprox 4 oz.) 
1 more egg than the cake mix calls for I usually use 4
1/2 cup oil. I use applesauce as a substitute for the oil.
use the amount of water the cake mix calls for.


 For this cake mix I used vanilla pudding so I also added a teaspoon of vanilla.



 Bake as per the mix instructions for cupcakes.


This makes a cake that rivals homemade.
I just did a fast job with vanilla icing. and some sprinkles. A fun Halloween decoration and they were done! I was really not trying to impress anyone here! Just feed them.

Thursdays/Colorburst Cupcakes

I am going to be posting my cupcake Thursday creation on Fridays.

So on Thursdays I am going feature other cupcakes I find around the Web.

Colorburst Cupcakes

1 white cake mix
2 eggs
1 C sour cream
1/2 C milk
1/3 C vegetable oil

Combine all ingredients until incorporated (about 30 seconds). Scrape sides of bowl and then beat on med-high speed for 3 minutes.

Divide batter according to how many colors you are using. I used 5 colors and it worked out to a little over 1 cup for each color.

Use food coloring to color batter to desired intensity. I used a 1/4 t and they were very bright! You could easily make pastel rainbows using a little less.


To get a layered stripe like I used, you'll want to put a spoonful of each color in the cupcake one at a time. The batter is thick, so it won't spread on it's own. A great tip is to set out a little bowl of water where you're working. Dip your finger in the water and then gently spread the batter out. The water will make it so the batter doesn't stick to your fingers.

Another tip is to use a measuring spoon and some water to measure out how many teaspoons/tablespoons are going to fit in your cupcake. Then divide that by how many colors you have so you know how much of each color to use for each cupcake. For my 5 colors, it worked out perfectly with 2 t of each color in each cupcake. So I put in 2 t of blue in the bottom of each cupcake and spread it out with my finger. Then I put in 2 t of green on top of that, then yellow, etc.

Bake them according to the package directions, until a toothpick comes out dry.. True crazy colors.

the beginning..

I started the CUPCAKE THURSDAYtradition at our home soon after we returned from a trip to San Diego. While there we went to a Heavenly store,Heavenly Cupcake.
I decided I can make great cupcakes for less than $3.00.
So to try recipes and fun different cupcake designs I wanted to use the
co-workers of my husband (we call him Grumpy) as Ginnie Pigs. Since then on every Thursday I have made cupcakes of all kinds.. and sent them with Grumpy on Friday to share with his co-workers. My Son caught on very quick. He brought the kids over about the second week.. and they have been coming on Cupcake Thursday since..
         This is how cupcake Thursday started.

i am alone in a motel room on "Hotel Circle" in San Diego, my family? at a San Diego Padre's' game. (i am not much in for baseball).

today was the perfect day to take Erin's advice and head over to Heavenly Cupcake,
now i can sit here and watch the first season of grays anatomy and eat my heavenly RED VELVET CUPCAKE!


as you might guess i am in San Diego.
this is our last night. i took plenty of pictures. i will be home tomorrow and blog about my trip. i took Erin's advice on someplace to eat and a beach to see.. so i'll let you know how it all turned out!

for now it is just me and my cupcake!...uhmmm heavenly.
